No-Bake Carrot Cake Oat Bars

These bars are so easy to make and take less than10 minutes to prepare. Gluten-free, packed full of fibre and healthy fats, they make an excellent mid morning snack to keep you going until lunch.

This recipe is a fantastic way to use up the last of the carrots, before we move into a greener season.

Makes 8 bars

10 minutes prep, 2 hours refrigeration

Ingredients

1 carrot, grated

180g oats

1/2 tsp allspice

1/2 tsp cinnamon

10 dates

1 tsp orange essence or zest of 1 orange

4 tbs coconut oil, melted

30g pumpkin seeds


Method For No-Bake Carrot Cake Oat Bars

Put all of the ingredients in a food processor and process until the mixture is well combined and sticky.

Tip the mixture into a 10”x10” baking tray and spread along the base of the tin evenly. Press down with your fingers to make sure it is compact.

Refrigerate for 2 hours and then cut into 8 bars.

They will keep in an airtight container for 1 week or in the freezer for 2 months.
