Smoked Tofu Tray Bake

This makes a lovely quick plant-based lunch for during the week, as once you've chopped the veggies, your job is done! For some, tofu might seem a little daunting, but the trick is to get it firm and smoked. This way it goes nice and crispy in the oven and adds great flavour to the dish.



Serves 2

30 minutes


Ingredients


2 small or 1 large sweet potato, chopped into cubes

1 head of broccoli, cut into florets

200g smoked organic tofu, chopped into cubes

100g cavelo nero or kale, chopped

2tbs groundnut or coconut oil

2 tbs tahini

1 tbs sesame seeds

Salt & pepper


 

Method for Smoked Tofu Tray Bake


Pre-heat the oven to 200 degrees C/390 degrees F.


Arrange the sweet potato and broccoli on a baking tray, pour over the oil and season well. Bake in the oven for 30 minutes.


After 20 minutes, add the tofu and cavelo nero to the tray for the last 10 minutes of cooking.


Once cooked, drizzle over the tahini and sesame seeds.
