Onions are naturally high in prebiotics - the food our gut bugs love to feed on, and when we pickle them, they produce probiotics - the beneficial bacteria we need to repopulate our gut.
This is such a simple way to show your gut some love - it takes less than 10 minutes to prepare and you can use them on salads, sandwiches or with grilled meats. I particularly enjoy them with grilled falafel, hummus and a green salad.
Serves 10
10 minutes prep, 1-2 hours pickling time
Ingredients
2 large red onions, sliced into quarter moons
1 tsp sea salt
1/2 tsp sugar
1/2 cup apple cider vinegar
Boiling water
Method for Gut Loving Pickled Red Onions
In a sterilised glass jar dissolve the salt and sugar in the apple cider vinegar. Add the onions and pour over boiling water until the onions are fully covered.
Let them sit out of the fridge for 1-2 hours, until the onions take on a bright pink colour.
These will keep in the fridge for up to 4 weeks in the fridge.
